One crop, one window. Everything we ship depends on what happens here.

Farming & Harvest

The growing season: dormancy, bloom, hull split, shaking, sweeping, and the race from orchard floor to controlled storage.

Dormancy & bloom

Winter pruning shapes next year's crop. In late winter the early varieties bloom first, and the orchards are pollinated on a managed schedule — bee hives placed by block and variety, with bloom intensity tracked so nut set is even.

Summer: sizing the crop

Through spring and summer the kernel fills. Irrigation and nutrition are managed to the block and to the weather; crop load is thinned where the trees would otherwise over-crop and undersize the kernel.

Harvest

Harvest begins when hull split reaches target — typically late August to late September, variety by variety. Trees are shaken, nuts swept into windrows, and taken to the huller within hours, not days. Hulling and drying start the same day the nuts leave the orchard, because that is where kernel quality is either protected or lost.

Harvest

Harvest week, day by day

  1. 1

    Shake

Mechanical shakers bring the crop down block by block.

  2. 2

    Sweep & windrow

Nuts are gathered and air-dried in the row.

  3. 3

    Hull & dry

Same-day hulling; kernel dried to target moisture.

  4. 4

    Store & sample

Lots go to controlled storage and into the laboratory.
